The long weekend is fast approaching and it looks like we'll have sunny skies and warm weather! I know what i'll be bringing to the park with me - this delicious + simple dairy free alternative to ice cream! Packed with healthy fats and antioxidants, it's a treat you can feel good about.
Kiwi Avocado Sorbet recipe
1 cup filtered water
1 cup sugar
1/2 tsp sea salt
2 large sized ripe avocados
6 ripe kiwi fruits
Juice of one lime
Mix water, sugar and salt in a pot. Bring the mixture to a boil for 2 minutes, then remove. *This can be made in advance and kept in the fridge (Simple Syrup)
Chop the avocados + kiwi and put them in a blender with the Simple Syrup and salt. Blend ingredients for a smooth consistency.
Place blended mixture in the fridge until it is really cold, and then place in your ice cream maker.
*If you don't have an ice cream maker, place it in the fridge and be sure to mix it up every hour or so*
