WHITE PEACH MAPLE SODA
It's Saturday night and I just got back from an inspiring Aromatherapy conference. I am in the mood for a beautiful aromatic cocktail and found this wonderful recipe on Quitokeeto. I am using nectarines instead of peaches and sprinkling dried lavender on top! Enjoy!
In a medium saucepan over low heat, combine 1/2 cup maple syrup, 1/4 cup water and 2 cups of unpeeled white peaches that have been cut into 1/2-inch chunks. You just want to warm the peaches and soften them a bit, but be mindful to not overcook. With a hand blender, puree the mixture. Set aside to cool completely.
When ready to serve, fill each glass with ice, then 1 part peach puree to 3 parts soda water, and a squeeze of fresh lemon juice. Stir to combine, and serve with a sprig of fresh lavender.
