Date and Tahini Energy Balls
Loaded with protein, fat and fiber these make the best lil midday snack!
Ingredients
1.5 c dates
¼ c rolled oats
¼ c shredded coconut
3 tbsp hemp hearts
1 tbsp cacao
2 tbsp tahini
1 tsp cinnamon
Directions
Start by soaking your dates in warm water for about 10 minutes, this helps to improve the texture of the energy balls.
While the dates soak, gently toast your oats and coconut shreds in the oven at 350 for a few minutes, until golden brown. You don’t have to do this step but it’s nice!
Once the dates are soft, remove the pits and add them to the food processor until smooth.
Blend in the remaining ingredients until everything is combined, you may get one large ball situation and that’s okay!
Roll and portion the balls into about 1 Tbsp portions and freeze for about ten minutes. Remove and store in an airtight container in the fridge for about one week.
