Easy Chopped Salad 

Chopped salad with cucumber, tomato, hummus, pita and soft boiled eggs

Ingredients

1/2 cucumber, seeded and chopped

1 tomato, chopped

1/4 red onion, chopped

1/2 cup fresh herbs chopped (think mint, parsley, cilantro)

2 Tbsp olive oil

2 tsp red wine vinegar or fresh lemon juice

1/2 tsp sumac

salt and pepper


Directions

Combine everything in a large bowl together, let sit for 5-10 minutes before serving.

Serve with hummus, pita, grilled veggies, fish, lentils or whatever you like!
